What does it do ?

This PR updates the Helm chart for the v0.21.0 release.

Closes #6353

As image version 0.21.0 brought support for Gateway API ListenerSets via #6254, would it make sense to include the following PR as well in the release?

As image version 0.21.0 brought support for Gateway API ListenerSets via #6254, would it make sense to include the following PR as well in the release?

It would be really great if this was included!
