Description

Crosspost of the "Observing kgateway with OpenTelemetry" blog post, scheduled to be published on the OpenTelemetry blog.
Discussed in this PR: open-telemetry/opentelemetry.io#9113

The post covers kgateway's OpenTelemetry support for traces, logs, and metrics, and evaluates it against a draft OTel maturity model.

Sorry for the slow follow-up on this. As you might have seen the original blog post ended in some discussion around the format that could be posted on the OpenTelemetry blog. I have instead, published the post here: https://www.dash0.com/blog/understanding-opentelemetry-support-in-kgateway
