intel/desktop: resize persist partition fails #352

When running on x64 hardware with config intel/desktop the resize during boot failes with

mount-all.sh[298]: error: running /usr/bin/resize2fs [resize2fs /dev/nvme0n1p2]: exit status 1, resize2fs 1.47.4 (6-Mar-2025)
mount-all.sh[298]: resize2fs: Device or resource busy while trying to open /dev/nvme0n1p2
mount-all.sh[298]: Couldn't find valid filesystem superblock.
mount-all.sh[147]: Failed to resize persist, continuing anyway.
