fix(docs): correct audit check count to 225+ in README and CITATION.cff

The actual total is 225 checks (74 Google + 46 Meta + 25 LinkedIn + 25
TikTok + 20 Microsoft + 35 Apple) but README still said 190+ and
CITATION.cff was stuck at v1.2.0. The per-platform table was already
correct; only the summary text and citation metadata were stale.
